I hope you enjoy today’s what I eat in a day, sharing what I am eating while breastfeeding at 3 months postpartum. I also share a super easy recipe for lactation cookies using ingredient that you likely already have in your pantry. Recipe below!
BREASTFEEDING COOKIES
1 cup oats
1/4 cup almond meal
1/4 cup tahini
1 tbsp chia seeds soaked in 4 tbsp water
2 tbsp coconut oil
2 tbsp rice malt syrup
1/4 tsp baking powder
1 tbsp maca powder
2 tbsp cranberries
2 tbsp pumpkin seeds
Add all ingredients to bowl and mix until combined. Shape mixture into cookies and bake in pre-heated oven for 10 minutes at 180 degrees celsius. Store in airtight container (will keep for 3-4 days at room temperature or 1-2 weeks in fridge).
